Sesame Seed Crackers
Having mastered oatcakes, we wanted to make some crackers to
go with our spicy .
We sifted 250g of plain flour into a bowl and added 1tsp baking
powder and 1/2 tsp salt. We then mixed in 2tbsp sesame seeds and
1tsp ground black pepper. We measured out 60g of cold butter and
cut it into cubes. We then worked this into our mixture until
it was like breadcrumbs.
We made a well in the middle and added 100ml of ice cold water,
mixing it in with a knife. When it was starting to come together
we worked it into a firm dough by hand.
We rolled the dough out between 2 sheets of baking paper to stop
it sticking to the rolling pin. To get it very thin (between 1
and 2mm) we worked it through our pasta machine.
We then cut out disc shapes and layered them on baking trays
with greaseproof paper and let them chill in the fridge for 20
mins.
We then baked them in the oven at 180°C for 10-15mins, keeping
our eye on them so they didn't burn.
We let them cool before serving with our pate. But they also go
great with cheese.
