Fennel & Smoked Salmon Tagliatelle
We have never eaten or used fennel to cook with before and Babs
bought a large bulb as it was on offer. We decided to use it with
some of our which we rolled out using the pasta machine and
made into tagliatelle strips and hung to dry.
We washed and chopped up the fennel bulb, keeping some aside
for garnish.
We heated a little butter in a pan and braised the fennel slices
for a few minutes until golden brown. We chopped up the remaining
fennel and some smoked salmon slices.
To the fennel we added a cream cheese sauce with garlic and herbs
and heated it through before adding some of the smoked salmon
pieces.
We boiled our tagliatelle in salted water for 5-6 minutes until
al dente. We drained it and then added it to the pan coating it
well in the sauce.
We served it on warmed bowls with some fresh smoked salmon and
strips of the raw fennel and fennel fronds. The taste of the fennel
was amazing and complimented the salmon perfectly. We will definitely
use it again, possibly raw in a salad and cooked with some squid.
