Three Cheese Florets
For this side dish, we had 2 medium heads of broccoli and cauliflower
which we broke into smaller florets.
We blanched them for a couple of minutes in boiling salted water
until they were cooked but still firm. Then set them aside (keeping
them warm) while we made the sauce.
We softened some plain soft cheese over a low heat and crumbled
in some stilton and Bavarian smoked cheese. We worked the cheeses
together until all softened and added a good splash of white wine
to loosen the sauce.
We then folded in the mixed florets until it all came together.
