Thai Tom Yam Soup
We had a tom yam paste which we cooked out with some chicken
stock and fish sauce. We added galangal, chilli, lemongrass, lime
juice and coriander paste before adding some raw chicken strips.
Once the chicken was nearly cooked we added our own pasta noodles,
spring onions, thinly sliced chestnut mushrooms and lastly jumbo
king prawns. Once the noodles and prawns were cooked through we
served our hot and spicy soup with freshly made prawn crackers.
