Carbonara Tagliatelle
              For our carbonara we finely 
                chopped a red onion, a couple of garlic cloves, some chestnut 
                mushrooms and lean bacon rashers. We made some of our homemade 
                pasta into tagliatelle. In a little oil we fried off the garlic. 
                  
              We then softened the onions in the pan before adding the bacon 
                and then the mushrooms. 
                  
              We let the mixture saute for a few minutes. Meanwhile we cooked 
                our pasta in salted boiling water for 5 minutes. 
                  
              In a bowl we mixed 3 eggs with some cream and whisked until combined 
                well. 
                  
              We added a generous helping of black pepper. We put the cooked 
                pasta (still warm into the pan with the bacon and mushrooms.  
                  
              We turned off the heat under the pan and added our eggs and cream. 
                We mixed it well until the eggs had cooked from the heat of the 
                pasta (being careful not to make scrambled eggs!). We served it 
                with some garlic bread and more black pepper and some chopped 
                red onion.
