Sweet Empanadillas

We chopped up some apricots that were soaked in Amaretto and some fresh cherries and strawberries. We rolled out some puff pastry and cut out circles and put the apricot, cherry and strawberry mixtures in the middles. We folded the pastry over and brushed them with egg wash.

We then glazed the pastries with egg wash and dusted them all with icing sugar. We let them bake in the oven for 12-15 mins until golden brown. While still warm we dusted them with more icing sugar and served with a selection of fresh fruit.
