Potato & Fish Tapas
For our tapas dishes we sliced and boiled a couple of potatoes
(some lengthways and some into small circles). We also sliced
some chorizo and black pudding which we fried until cooked.
Once cooked we removed the chorizo and black pudding from the
pan to an oven-proof dish to keep warm. We cut an onion into wedges
and fried these in some oil too and then kept them warm. Once
our potatoes were cooked we coated them in seasoned flour, dipped
them in egg and more flour and deep fried them for a couple of
minutes.
We made up another coating of flour, seasoning and paprika and
covered small pieces of white fish with it before deep frying
them for 3 minutes (until cooked).
To finish them off we dusted them with some more paprika. We
then sauteed some prawns and red chilli. We assemble tapas kebabs
using skewers. We had layers of chorizo, prawn, onion and potato.
For the other tapas we topped each slice of potato with some
soft cheese and added a selection of toppings from prawn, chorizo,
black pudding and chilli.
