Lemon Potatoes
Another great Greek accompaniment. We preheated the oven and
spread the potatoes in a roasting pan. Then scattered over finely
chopped onion, garlic and dried oregano. And seasoned to taste
with salt and pepper.
We poured over some olive oil and the juice of 2 lemons.
Then we left them to bake for about 45 minutes, turning the mixture
over and baking for a further 45 minutes, until the potatoes were
cooked through.
