Leek Pancakes

We fried off some thinly sliced leeks in some butter and worked in some blue cheese. Our pancakes were made from a packet batter mix.

We scooped some of the cheesy leek filling into our pancakes which we rolled, sprinkled with some parmesan cheese and baked in the oven for 10-15 mins.
