Jambalaya
We made a cajun spice mix by grinding coriander, mustard seeds,
chillies, cumin, black peppercorns, paprika, garlic, thyme and
oregano.
We fried chicken and chorizo sausage until browned then added
the cajun mix.
We then added a tin of tomatoes, chicken stock and long grain
rice. We let it simmer away until most of the liquid was absorbed.
Spicy and delicious!
