Hassleback Potatoes
We wanted to serve a different
kind of potato with this years Christmas dinner, so we thought
we'd give hasslebacks a try. We washed a couple of potatoes of
a similar size and placed each onto a wooden spoon. We then carefully
cut slits into the potatoes almost down to the bottom. (The wooden
spoon stops you from going right through the potato. In a pan
we melted a knob of butter.
We placed the potatoes in the pan slit side down to help soak
up the butter. We basted them until well covered. We then seasoned
with salt and pepper and baked in a hot oven (200°C) for 15-20
minutes until golden but soft inside.
