Citrus Pork Patties, Tzatziki & Flatbreads
To 450g of pork mince we added the zest and juice of a lemon
and a lime and 1 tbsp chopped parsley and coriander.
We added some salt and finely ground black pepper and some dried
chilli flakes before mixing well together.
We divided the mixture into small portions and shaping into patties.
We then fried them over a medium heat until browned.
We then topped them with some goats cheese and put them under
a hot grill until cooked through and the cheese had melted. We
had some broccoli and green beans.
We lightly blanched these and kept warm. For our tzatziki we
used half a cucumber which we peeled, cored and chopped finely.
We finely chopped some garlic cloves which we added to Greek
yoghurt.
We added chopped fresh mint and the cucumber and mixed well.
We sprinkled some paprika on top.
For the flatbreads we mixed together 250g self raising
flour, half a teaspoon of baking powder and a pinch of salt. We
added 250g Greek yoghurt.
We worked it into a dough and let it rest.
We cut it into 4 pieces and then flattened them
out into some oval shapes. We sprinkled over some dried chilli
flakes and then baked them in the oven at 180°C for 10-12
mins.
We served the warm flatbreads with our patties, broccoli, green
beans and fresh tzatziki, what a wonderful zesty, zingy combination.
