Bruschetta
Babs bargain hunting at lunchtime picked up a pack of Italian
Toasting Bread - a snip. We sliced some tomatoes, spring onion,
feta and green olives.
We toasted the bread under the grill on both sides until golden.
We then smeared on some fabulous sun dried tomato and feta tapenade
which Despinaki brought back from Rhodes.
We then layered the tomatoes, feta, spring onions and olives
on top put under the grill for a few minutes to warm through.
A fab tasty starter which reminded Despinaki of her lovely holiday
in Rhodes.
