Spicy Spaghetti Bolognese
We started by making our own pasta. 16oz Pasta Flour; 3 large
fresh eggs; pinch of salt.
We brought the mixture together to form a dough. We added a1
tsp of paprika and worked it into the pasta. We wrapped it in
cling film and let it chill for 20 mins.
To add depth to our sauce we drained and chopped a can of anchovies.
We chopped an onion and 3 garlic cloves.
We also chopped a red and green chilli. In a little oil we fried
the anchovies until almost disappeared, then added the garlic.
The the chilli went in followed by the onion. Once they were
cooked down a little we added a can of chopped tomatoes.
Our pasta was now ready to roll and looking lovely on dark with
the paprika. We rolled it through the pasta machine until the
last setting and made spaghetti out of it.
To the sauce we added a packet of frozen Quorn mince, stirred
well and cooked for a further 15 mins. We boiled our pasta in
salted water for 5-6 mins and drained well.
The pasta was served alongside our hearty Bolognese.
