Amareto Apricot Pastries

The apricots were soaked in Amaretto. With ready to roll puff pastry, we cut out vol-au-vent shapes and put the apricots in the middles. We then dusted them all with icing sugar and baked in the oven for 10-12 mins.

We served it with good quality vanilla ice-cream.
